Demonstrating Mixing Liquids
We identified flavor ingredients that will give our salad dressing the right flavor balance and also dissolve so there are NO sediments left in the salad dressing. But, we still need to figure out how to create a salad dressing that doesn’t separate!
What do you observe about the mixing of these two liquids?
What do you observe about the mixing of these two liquids?
If two different substances mix, that means the two different molecules ______________________
If two different substances DO NOT mix, that means the two different molecules ______________________
Testing Attraction
We will be testing how attracted molecules of water are to one another and how attracted molecules of oil are to one another.
To test the attraction between the molecules of a liquid, we’ll put drops of the liquid onto the penny and observe the shape that the drops form and the number of drops that will stay on the penny before the liquid spills over the side.
If a liquid has molecules that are very attracted to one another, would you expect to get more drops or fewer drops to stay on a coin?
Which did acetone look more like after 10 drops, A, B, or C?

How many drops of acetone was added to the coin before it overflows? Type in only the number.
Which did water look more like after 10 drops, A, B, or C?

How many drops of water was added to the coin before it overflows?
Which did oil look more like after 10 drops, A, B, or C?

How many drops of oil was added to the dime before it overflows? Type in only the number.
Which substance had the MOST drops on the coin before spilling?
This means that the molecules of the substance are _____________
Which substance had the LEAST drops on the penny before spilling?
This means that the molecules of the substance are _____________
If a liquid holds together more, which one of these shapes would it be?

Which penny is holding the most liquid?

Are the molecules of the liquid on penny “C” attracted or not attracted to each other?
Rather than just making an inference about whether the substances mix or don’t mix, today we will note how mixed the substances are—on a scale from not mixed to slightly mixed to mostly mixed to completely mixed.
Add Molecule 4 and Molecule 3 into the dish, then mix.

How mixed are these two substances?
Add Molecule 1 and Molecule 6 into the dish, then mix.

How mixed are these two substances?
Add Molecule 2 and Molecule 4 into the dish, then mix.

How mixed are these two substances?
Add Molecule 5 and Molecule 6 into the dish, then mix.

How mixed are these two substances?
What happens when molecules have a high level of attraction to themselves?
When two substances are completely mixed, what level of attraction do their molecules have to one another and to themselves?
